My lamb kerutub

This is my favourite Kelantanese dish. Thanks to Azzman Nureen of Wolverhampton for the demo in Birmingham. Before this demo, I never get my kerutub to taste right. Kinda expert now..P

Ingredients:

1 kg beef with bones
3 blended Holland onions, 5 garlic, 1 inch ginger, 1 inch galangal-blend coarsely
2 tbs kerutub spice/ powder (from Kelantan).
2 tbs blended red chilis
1 tsp shrimp paste
salt
11/2 cups coconut milk
1 tsp kerisik (optional)
cardamons, cloves, cinnamon stick, star anise
whole green chillies- make a cut in the middle
screw pine leaves (optional)

Methods:
1. Fry onion ginger mix in 3 tbs of oil till fragrant. Add blended red chilli paste.
2. Add kerutub spice and 1/2 cup of water. Add beef and simmer for 1/2 hour, keep on adding a litlle bit of water to prevent it drying.
3. Once the meat is tender, add coconut milk, kerisik and salt and a sprinkle of sugar.
4. For those who love potatoes, you can also add them but the original Kelantanese kerutub doesn't have potatoes in it. I usually add whole green chillies and pandan leaves for their fragrant smell.
5. Once the gravy is thick, serve with white rice or briyani rice. Please note that kerutubs are meant to be thick, not thin like curries.

Simple Lamb Kuzi

Ingredients

1 kg of lamb
1 tbs crushed ginger
3 tbs blended onion
5 garlic
2 tbs kuzi spice (powder)/ briyani powder
2 tbs tomato sauce
1-2 tbs tomato puree
2 tbs chilli boh (optional)
2 cups milk/ evaporated milk
3 tbs blended fried onion.
salt
2 tbs sugar (this dish is meant to be a bit sweet, but i don't like it too sweet)

Methods
1. Place all ingredients in the pressure cooker and cook for 20 min till the lamb is tender.
2. Turn off the gas, cool the pot under running cold water, open the lid and add salt and sugar to taste.
3. Add fried cashew nuts, almond, sultanas/ raisins. Ready to serve with rice/ bread.

Lamb steak again

Everbody seems to love lamb here including Tok Bak. So prepared this dish for our dinner last night and for Wan's iftar. Wan is on her day 3 of Rejab fasting. Baked together with baby potatoes and mushrooms when the lamb is halfway done. For black pepper and rosemary marinade, please see previous grilled lamb recipe. It's the same ingredients. Baked in the oven at 200 C for 1 1/2 hours and the lamb was so succulent and juicy. Emm yummy.....

Lamb BBQ

Errgh..another 2 days of holidays left. Bercintanya nak masuk lab balik Monday ni. Keje bukan main banyak lagi menunggu. Got to present to the whole institute again in 6 months time and be assessed. Yikes! Thinking about it makes me feel so miserable. The agony of going into the viva again and get fired by the professors. Urgh.. Sapa soh buat PhD kan? Nasib la....


Tak pelah, in every dark cloud there must be a silver lining right? Anyhow masak tetap kena masak. Breakfast today nasi goreng daging. Weekend lunch or dinner is usually a family dinner awaited by everybody. Today Mama cooked lamb BBQ with black pepper sauce. Had forgotten to marinade the lamb last nite, so it turn out a bit tough but still tasty though.


After marinating the lamb, open up Mama's saloon. Cut Aiman's hair after googling up you tube on 'how to cut man's hair'. The video was very helpful.

This the lamb BBQ recipe. First make the black pepper sauce.
Ingredients:
3 cloves of garlic
1 tsp fine black pepper
1 tsp coarse black pepper
1 tsp rosemary
1 tsp mustard
1 tsp plum sauce (optional)
1 tsp paprika (can add more for better colour and spicier flavour)
beef stock
3 tbs oyster sauce
1 tbs cornflour
Method:
1. Fry garlic till yellow and add beef stock. Add paprika, oyster sauce, black pepper, rosemary, mustard (add little by little and taste, as it is quite sour).
2. Add cornflour and boil for a few minutes. Done
Use half of this black pepper sauce to marinade the lamb. The remaining half is used as the sauce when serving.
Mama's lamb BBQ..emm yummy....last feast before starting on low carb diet with Aiman next week.
